Chocolate Zucchini Muffins

Prep time: 15 min
Cook time: 20 min
Servings: 12-18 muffins

Ingredients

3/4 c brown sugar
1/4 oil
2 eggs
1/2 tsp vanilla
3/4 c cocoa (unsweetened)
2 c flour
3 tsp baking powder
1 c milk
1 cup grated zucchini (packed)
Chocolate chips (to taste)

 

  • Preheat your oven to 350 degree
  • Place liners in 12-18 muffin tins
  • In a large bowl, whisk together the sugar and oil
  • Add the eggs and vanilla; beat well
  • Gently stir in the cocoa
  • In another bowl, combine the flour and baking soda
  • Add the flour mixture to the sugar and egg mixture, alternating with the milk as needed
  • Stir in the zucchini
  • Sprinkle chocolate chips on top
  • Fill each muffin tin 3/4 full
  • Bake 20 minutes or until the muffin tops spring back and a toothpick comes out clean
